- Crushed Tomatoes: Provides a smooth, slightly sweet base. Opt for crushed over purée for texture. Jarred sauce is acceptable.
- Basil: Include basil stems for maximum flavor.
The Chicken
- Panko Bread Crumbs: Ensures a crispy coating. Use extra panko for an even coat.
- Parmesan: Mix into panko for flavor and with shredded mozzarella for richness.
- Chicken Cutlets: Ensure cutlets are 1/4" thick. Pound chicken breasts if cutlets are unavailable.
- Mozzarella: Use freshly shredded mozzarella for best melt.
- Vegetable (Or Canola) Oil: Use neutral oil with a high smoke point for frying.
